Step 1 - Soft Boiled

Place happy eggs in a small pan and cover the eggs with cold water.

When the water is boiling - start timing the eggs. Reduce the heat a little so that the water is still bubbling:

  • 3 minutes for soft boiled
  • 5 minutes for firm yolk

Step 2 - Hard Boiled

Place the happy eggs in a small saucepan and cover with water.

Bring to the boil and boil for 3 minutes.

Turn off the heat and cover, leave for 8 minutes.

Plunge them into cold water, and leave the tap running till the eggs are cold.

Top Tip!

They will peel best if you put them in the refrigerator for an hour.

Scramble Eggs

Step 1

Break 3 happy eggs into a glass or metal bowl.

Step 2

Whisk the eggs with 2 tablespoons of milk and season with some salt and pepper.

In a small saucepan, melt some butter, add the egg mixture and cook over a medium heat, whisking until the mixture begins to set.

When it is almost set, remove from the heat and allow the heat from the pan to finish the cooking.

Serve on hot toast…mmmmm!

Step 1

Break 3 happy eggs into a glass or metal bowl.

Top Tip! Break up the eggs with fork (don't whisk), and season to taste.

In an omelette pan melt a little butter.

Add the egg mixture, and as the egg begins to set; with a wooden spatula, gently draw the egg mixture around the pan, until the bottom begins to set.

Continue this until all the egg mixture has gently set.

Slide the omelette onto a plate, fold over - and serve…for an extra tasty treat sprinkle some cheese and pop under the grill!
